Stuffed Mushrooms

This is one of the easiest full flavoured dishes to cook individually are great as dinner party starter or two of them as a weekday dinner with a side salad. And it takes no more than 30 minutes to make.


Ingredients for 2

4 large Field Mushrooms or Portobello Mushrooms

1 Onion – diced

3 cloves of Garlic – thinly sliced

65g diced Pancetta


4 slices of Stilton



Olive Oil

4-5 handfuls of Breadcrumbs



Start by removing the mushroom stalks and chopping them up. Heat the oven to 180°C fan.

Heat a tablespoon of oil in a frying pan over a medium heat and cook the onion and garlic with salt, pepper and thyme until the onion is soft.

Then add the pancetta and chopped mushroom stalks, and fry till cooked. Next add the breadcrumbs along with another tablespoon of oil and stir everything through so that all the ingredients are combined evenly. Continue to cook for a couple of minutes, ensuring it doesn’t burn.

Next place the mushrooms on a baking tray and stuff each of them with the breadcrumb mixture and cook in the the oven  for 15 minutes.

Remove the mushrooms from the oven and top each with a slice of Stilton. return the mushrooms to the over for about 2 minutes until the Stilton has meted. Then serve with a dressed salad.
